I love fenugreek, sold here as "Bockshornklee". I recently learned that Americans tend to know this taste much better than many Europeans, as fenugreek is frequently used in the production of flavoring for artificial maple syrups. It's not super-original to add it to Vindaloo, but I like it.

Traditional Vindaloo doesn't have potatoes, the name comes from the Portuguese "Carne de Vinha d' Alhos" (meat with wine and garlic), and was brought to Goa by the Portuguese where it became Vindaloo curry. However, "aloo" is Hindi for potato and through a cross-linguistic misunderstanding, potatoes were added.

Jajangmyeon (also spelled jjajangmyeon) is a Korean dish, derived from the Chinese dish zhajiang mian. It consists of wheat noodles topped with a thick sauce made of chunjang (a salty black soybean paste), diced meat and vegetables, and sometimes also seafood. Jajang (also spelled jjajang), name of the sauce, is the Korean pronunciation of the Chinese characters 炸醬, which literally means "fried sauce." Myeon (also spelled myun) means "noodle."
